Caramelized apples, traditional recipe
With us in Italy, caramelized apples are prepared according to a slightly modified recipe compared to the original which involves the use of corn syrup. For the Italian recipe, please refer to the pagehow to make caramelized apples. For the traditional simple recipe, the ingredients you need are:
- 8 apples
- 2 cups of sugar
- 3/4 cup of water
- 1/2 cup of corn syrup
- 1/2 teaspoon of red food coloring
Optional ingredients: a few drops of clove extract and / or cinnamon powder.
Method:
- Wash the apples and remove any waxed surface layer.
- Insert the stick into each apple and let them dry well.
- Mix the sugar, water, corn syrup and food coloring.
- Place the ingredients on the stove and bring to a boil. You will need a saucepan with a very thick bottom to avoid burning the caramelized layer.
- Once it has boiled, lower the heat to a minimum and let it boil until it reaches 290 ° C. ***
- Add the essence of cloves or cinnamon.
- Quickly coat the apples with your hot caramel and let them cool on a sheet of baking paper.
*** A cooking thermometer can be bought with a cost of about 10 euros, it is convenient and you can use it in different recipes. If you are not going to buy it, to understand when it is time to stop cooking the caramel, just take a little caramel and let it sink into a glass full of cold water. If the caramel solidifies and becomes semi-rigid, then it's perfect! If the caramel is still very fragile and tends to break down, then you will need to continue cooking.
Thecandy applesthey can also be prepared inmicrowavebut in this case it is more difficult: the ingredients are the same but it will be necessary to stop cooking the caramel every 5 minutes in order to mix and check its consistency. Again, you can use a glass of cold water to understand when the caramel is ready.
