How to make mopur at home? As stated, the original recipe is secret but we can offer you two valid variations. The recipe most similar to commercial mopur is prepared starting from chickpea flour, however we will indicate one with lentil flour. Let's see the ingredients immediately.

Mopur, recipe # 1

  • 80 grams of chickpea flour
  • 80 grams of mother yeast
  • 150 grams of wheat gluten
  • 5 grams of salt
  • pepper as required
  • 250 ml of warm water
  • spices to taste (ginger, coriander, curry, rosemary, paprika ...)

Method

Put all the ingredients in a large enough container. Knead until you get a soft dough that you will have to cover and leave to rise for 5 hours.

In processing, give the dough the classic shape ofmopur(a cylinder) to be wrapped in a kitchen rag.

Prepare the vegetable broth as usual and, when it reaches the boiling point, place the mopur in the pot. Cook for 45 minutes.

  • 160 grams of lentil flour
  • 80 grams of mother yeast
  • 40 grams of wheat gluten
  • 210 grams of warm water
  • 5 grams of salt
  • pepper as required
  • spices to taste (ginger, coriander, curry, rosemary, paprika ...)

Useful tips: to allow the mopur to keep its shape, place it in the broth without removing the kitchen rag. In this case, however, you will have to use natural organic cotton, free of dyes. Remember that the tea towel must be washed by hand without detergent!

When mixing, you can enrich the mopur with chopped dried olives, capers or dried and chopped tomatoes.

To season the mopur, avoid protein-based side dishes (peas, beans or other legumes), prefer vegetable or carbohydrate-based side dishes such as potatoes, mushrooms, peppers, zucchini, eggplant ...

To make the mopur tastier, you can add a spoonful of extra virgin olive oil to the dough.
